Kitchen Exhaust & Grease Odour Treatment

Kitchen exhaust combines hot air, cooking aerosols and gaseous odours. Ozone may be assessed as a downstream odour-treatment stage after suitable grease capture, with the kitchen and occupied spaces protected from exposure.

The Treatment Challenge

Cooking schedules create changing grease, moisture and odour loads. Deposits in ducts are a maintenance and fire-safety concern, while an odour-treatment device cannot compensate for poor capture at the hood.

How Ozone Helps

Ozone can react with selected gas-phase cooking odour compounds under controlled conditions. It does not replace grease filtration, duct cleaning or fire protection, and oxidation may create additional compounds that require evaluation.

Exhaust capture and grease separation precede assessment of oxygen feed, ozone generation and duct or reactor injection. Mixing and available contact time depend on measured airflow. Outlet monitoring and residual-ozone destruction are considered before final discharge.

System Integration

Hoods, grease filters and ventilation remain the primary capture system. Adsorption or other exhaust treatment may be required, and access for cleaning must be retained around any ozone-injection or destruction equipment.

Engineering & Automation

PLC permissives can link ozone production to fan operation and confirmed airflow. HMI status, filter-pressure sensing, ozone alarms and shutdown interlocks may be provided; remote settings must respect kitchen isolation and service access.

Important Design Considerations

Ozone dose, contact time, mixing efficiency and treatment performance require actual exhaust quality, flow and cooking-load data. Assess temperature, humidity, by-products and discharge conditions against treatment goals, without assuming odour reduction establishes safe emissions.
